I couldn't find your term specifically -- you couldn't either? Extrapolating from evakueringskanal, tho, I found this Evakueringsspjäll -- where spjäll is generally 'damper' (see ref).   -> I missed the bakery context (stickugn) and took a general approach. Unless the poor baker fell asleep from having started worked so early! And the timer fails, and...;-)

I have found a defintion of 'stickugn' which means smelter (see reference) so given Susanne's context is more engineering than baking, we *may* not be talking about a baking oven. I am therefore suggesting the generic term 'damper', acknowledging that this is close to Daniel's and Anna's solution.
