From regulations for accreditation of higher education programs:

"Når det gjelder relevans for arbeidsliv, kan uttalelser fra Råd for samarbeid med arbeidslivet, aktuelle avtakerbedrifter, kandidatundersøkelser eller lignende, brukes i redegjørelsen for å understøtte at studiet er relevant for arbeidslivet."

"Purchaser", "customer" or "consumer", often used for "avtaker," are in a literal sense a description of what these firms are doing in the labor market, but they are hardly appropriate in the context.

If you come back with evidence of some trendy use of one of those, please bring along a dose of tran to hide the taste as I swallow it. :-)

Firms who recruit among the graduates, firms who employ the graduates, or perhaps target employers, seen from the students´ point of view.

I would simply use an expression like that.
