Explanation:
Tumbet

3 aubergines
2 onions
3 cloves garlic
4 large tomatoes
2 large potatoes
2 red peppers
olive oil
chopped oregano or marjoram (about 2 tablespoons)

Finely chop garlic and onions and fry in a tablespoon of olive oil
until soft. Stir in chopped tomatoes and chopped herbs. Simmer
for 15 minutes. Next cook the sliced potatoes in a little olive
oil until golden brown on both sides. You may need to do this in
batches to get a single layer in the pan. Fry the aubergine in
olive oil (cut the aubergines into large chunks) Fry the peppers
(sliced) in more olive oil. Layer all the ingredients in a dish
and bake at 180C for 15 minutes. Traditional recipes use a lot of
olive oil to cook all the separate ingredients. I prefer to cut
down as much as possible. Good served with homemade bread and a
salad.
