spine Explanation: The article I was going to refer to is copyright, but it describes stripping spines out of carcasses instead of sawing through the vertebra. It can be googled. That is the expression used. This ensures that the meat is not contaminated with spinal chord tissue (possibly containing dormant prions that cause BSE). |

A recent development in Denmark is the ***low noise circular saw*** which is being used extensively throughout Scandinavia. It is extremely effective in reducing noise levels and a longer saw life is also claimed. Another project which is due for abbattoir trial shortly is an automated backing down system. ... One of the major research projects being carried out by the Danish Meat Research Institute is in improving the pig carcass trading procedure. A complex and expensive machine has been developed which measures backfat automatically at 18 sites. It underwent commercial trials in 1987 and is intended to lead to a more accurate prediction of total lean in the carcass along with a better understanding of the fat distribution. This information could be fed into an automated cutting system at a later date to optimize the way in which each carcass is broken and further processed. -------------------------------------------------- Note added at 3 days8 hrs (2012-03-25 19:45:22 GMT) -------------------------------------------------- Pig Industry Quality Manual 2011 www.lf.dk/Aktuelt/Publikationer/~/.../UK_QualityManual2011.... PDF/Adobe Acrobat - Quick View (Page 85 of 156 pages) 3.7.2 Methods All Danish co-operative slaughterhouses use an automated carcase splitting process. The long muscle of the back is loosened from the vertebral area before the carcase is split into two sides. Preliminary incision and loosening A deep cut is made through the cartilage in the vertebral area from the tail to the top of the neck along the dorsal fin. After this, the so-called ‘flat bones’ are loosened on both sides. The tools must be disinfected in hot water (82 °C) between each carcase. At several slaughterhouses, loosening is carried out by a loosening robot. Splitting An automatic saw splits the vertebrae from tail to snout. Before the carcase is split, the length of the pig is measured so that the sawing can be carried out without damaging the muscle. Intact muscles are important to ensure good meat quality and keepability. After each operation, the saw is automatically sterilised in hot water (82 °C). |
