This is the name of a type of sponge/cake/biscuit. I think it's probably something like a boudoir biscuit.
The ingredients are:

Egg yolks 0.600 kg
Sugar 0.600 kg
Trimoline (inverted sugar syrup) 0.030 kg
Egg whites 0.900 kg
Sugar 0.150 kg
Flour 0.750 kg

Method:
Beat the egg yolks with the sugar and trimoline until light
Whisk the egg whites with the sugar until stiff
Fold the egg yolks into the egg whites
Fold in the sifted flour
Pipe to the desired size
Bake at ??? °C
