Three phase and two phase power grids operate, as one expects with AC systems, at a frequency. That is to say, the power will peak at set intervals of time, or a set number of times in a second. You can describe this as a wave, coming from a source. You can add another wave, of identical frequency, at a specific time in between the first wave's peaks, and you can do this again with a third.
This allows power loads to be balanced between regulation equipment, so if one fails, the system doesn't go dark.
A good reason to use 3 phased power is the ability to pull power at different voltages from the same line.
