the sentence in which the term is used is:
For this he used to wait for the right day, with a nice breeze to help in the process of lifting the hay in the air using the winnowing fork.

I read about the Dutch term 'wan' but I think this is more like a basket and not a fork. 'Hooivork' is also a term that came to mind but I don't know if there is a special term for this kind of fork used in the old days.

WINNOWING: The final step in separating cereal grains such as barley and wheat from their chaff and straw. After threshing has broken the grain kernels loose from the chaff, and the straw has been cut into small pieces, the whole mixture is winnowed by tossing it into the air against the wind with a winnowing shovel or fork.

WANNEN: De laatste fase van het proces waarbij de korrels van granen, zoals gerst en tarwe, van het kaf en het stro gescheiden worden. Nadat door het dorsen de korrels van het kaf zijn losgemaakt en het stro tot kleine stukjes verbrijzeld is, wordt het hele mengsel gewand door het met een wanschop of -vork tegen de wind in omhoog te gooien

agree  Barend van Zadelhoff: Als het gedorste koren op een hoop lag gooide de landbouwer bij een gunstige wind met een wanvork het koren omhoog zodat het kaf, het lege omhulsel van een graankorrel, wegwoei en het koren terug viel op de grond.
