English term or phrase: square grid wire rack
Bonjour,

"In a freestanding mixer using the beater attachment, mix all the ingredients until the dough comes together.
Using a dough scraper, push the dough through a square grid wire rack onto a lined baking tray."

agree  Tony M: Yes, even 'à travers' — it is the mesh that is square, not the overall shape.

disagree  Tony M: It is not the overall shape of the wire rack that is square, as in your ref., but rather, the shape of the mesh. / Yes, but your suggestion does not accurately translate the source term! Translates a 'square rack' not a 'square GRID rack'

-> I am aware of that! The mesh is square in my image. There is also an image of a rectangular one. I don't understand your reaction!/ You must be joking!!!

Reference information:
Here is a page that shows 'cornes', 'coupe-pâtes', and a 'grattoir à spätzles':

Although the category title mentions 'racloir', the only one actually shown is referred to as a 'raclette'.
