...that for scraping the pâte out of the mixer bowl, you would need to use the curved-edge 'corne', rather than the straight edged 'coupe-pâte', which is used more like a guillotine blade to cut of portions of dough. The advantage of the 'corne' is that it can serve both functions, as it usually has both a straight and a curved edge. One of my favourite utensils in pâtisserie, due to its versatility ;-)

I do rather tend to agree! I suggested this term a long time ago on a previous KudoZ question, as being the correct technical term, but got shouted down by our native French colleagues, some of whom never seemed to have even heard of it! Since then, I've spoken to many pâtissiers, none of whom has seemed particularly familiar with the term or even to use it. So I can only assume this is one of those 'correct' technical terms that no-one actually uses in everyday communication!

je traduirais ainsi "à l'aide d'un racloir/une raclette à pâte, déposer sur une grille à pâtisserie à mailles carrées et appuyer pour faire ressortir la pâte sur une plaque de cuisson garnie de papier sulfurisé". La volette, c'est très joli mais combien de cuisinières francophones connaissent ce terme ?

The dough scraper could also be called a "coupe-pâte" if it's a rigid metal one.

The plastic types shown on your search page (red or white, mainly) are indeed exactly what we would call a 'corne'! The other, metal, versions are a different notion, I don't know if there is a different term in FR, but in any case, not a 'grattoir', I feel sure. In fact, doing a similar search on 'corne' does indeed show some of the straight-edged metal varieties too:

Note too that a 'dough scraper' is probably what we call a 'corne' in pâtisserie. 'grattoir' sounds distinctly unfamiliar in this context.
