The authors propose that a rounded value of 1.63 would therefore represent the maximum theoretical limit of attenuation (MTLA) for all possible brewery fermentations. It would mean that a 12 °P wort could thus produce a maximum of (12 / 1.63) = 7.36% ABV, but only if the carbohydrate component of the extract consisted to 100% of maltose, the yeast’s nitrogen and growth factor needs were sufficiently catered for, the level of oxygenation and yeast vitality were optimal and furthermore, that the yeast could be kept in suspension longer than in normal fermentations to aid assimilation of the fermentable substrate. This led the authors to speculate that all the OE to ABV ratios calculated above could also be expressed as ratios against the MTLA; those recalculated ratios we decided to call "attenuation scores". In essence, the higher the attenuation score, the more closely the attenuation approaches that of the MTLA.

I suppose the authors "invented" term. But I cannot "invent" something appropriate. The best I came up with is Vergärungsgradwert, but this does not sound right.

wenn die Einheit "Prozent" ist, dann handelt es sich, so oder so, um ein Verhältnis, d.h. einen Quotienten. Was ja auch der Definition entspricht.
Vielleicht ist aber die "Vergärungskennzahl" eine Möglichkeit für Dich? Oder auch "Vergärungswert"? Oder "Vergärungszahl"? .

'score' würde ich hier mit "Wert" übersetzen. Da MTLA hier unter dem Bruchstrich steht, sollte man "Dämpfung/Schwächung" durch den Kehrwert ersetzen, hier also "Verstärkung/Sättigung".

In diesem Zusammenhang ist es von Vorteil, wenn die Beladung der Würze mit Sauerstoff auf die erforderliche Konzentration exakt eingestellt werden kann, da eine Überoxydation der Würze eine Verschlechterung der Stabilität und Haltbarkeit des Bieres nach sich zieht.
Nun ist bekannt, daß die Beladung einer Flüssigkeit mit einem Gas allgemein von Druck und Temperatur der zu beladenden Flüssigkeit abhängt. Der zeitliche Verlauf dieses Stoffaus­ tauschvorganges hängt wiederum von einer Reihe von Faktoren ab, von denen der Stoffübergangskoeffizient, die spezifische Austauschfläche und die Beladungsdifferenz zwischen der Gleichgewichtsbeladung (Sättigungswert) und der gegebenen Beladung der Flüssigkeit die wesentlichsten sind.

Ich denke, dass diese Interpretation zum Vorgang des Bierbrauens passt.

Asker: Danke Barbara, ich weiss das natürlich alles, nur leider ist es hier kein Verhältnis, weil dieser score vom OE - ABV-Verhältnis abgegegrenzt wird. Quotient ist es auch nicht, aber ich kann natürlich nicht einen 7-seitigen Artikel posten. Es ist irgendeine Punktzahl, wie ich in einer Abbildung sehe. Noch Vorschläge? Ich denke, die Einheit ist %.
