Aeration — or, more specifically, oxygen concentration — should also be quite familiar to brewers. The production of ethanol canonically occurs only in anaerobic (oxygen-depleted) environments, yet most Saccharomyces yeast have evolved the ability to produce ethanol even in the presence of oxygen (which is why open fermenters still produce beer). Increasing oxygen will stimulate yeast growth, and thus all of the aroma and flavour compounds linked to heightened growth rates (e.g., *fusel alcohols*, diacetyl and acetaldehyde) will also be elevated.

Mir fällt nichts Gescheiteres als "Fuselalkohol" ein, aber irgendwie passt es nicht hier und hört sich nach billigem Schnaps an.

Einfache Alkohole, die neben Ethylalkohol bei der Gärung entstehen

Im Zuge der alkoholischen Gärung entstehen außer dem erwünschten Ethylalkohol auch andere Alkohole. Als Ausgangsstoff nutzen die Hefen dafür jedoch nicht Zucker, sondern Pektin für Methanol und diverse Aminosäuren für Alkohole wie Propanol, Butanol etc. Diese Alkohole sind durchweg gesundheitsschädlich, kommen im Wein aber nur im Milligrammbereich vor, am meisten noch Methanol in manchen Rotweinen. Früher bezeichnete man die Begleitalkohole als Fuselalkohole, was häufig zu Verwechslungen mit Fuselölen geführt hat, die ihrerseits ein Gemisch aus mittleren und höheren Alkoholen mit Estern, Aldehyden, Terpenen und Carbonsäuren darstellen.
