This is the first of three questions (see ahead) from the following sentence:
AS IN MOST WINERIES where **harvesting** is done exclusively by hand, [the winery] had used the same **tracking system** for more than a century to compensate its workers during the harvest season, based on the manual **collection of chips.**

Is harvesting here simply איסוף? I know the right term for picking grapes is בציר but the sentence doesn't seem to talk about the actual picking from the vine.
