It's no surprise that these fields all attract disproportionate numbers of high-achieving Ivy League optionality chasers; what could be a more appropriate reward for two decades of résumé-building than a seemingly elite, process-oriented career that promises to "keep options open"?

Explanation:
Sorry for the delay, but I am quite sure about this version.
A process is also to understand as a development, progress, method &c.
I think that after the twenty years he/she is continuig his/her carrier!

Elite is also difficult. Privilegiata is better than elitaria! More context would help!

A little more context would help.
This is a book on how to build start-ups written by Paypal founder- Peter Thiel - in the paragraph you are discussing the substance is in the first sentence: Instead of...

I think that in context, "orientati ai processi" becomes clear and makes sense.

...."Instead of working for years to build a new product, indefinite optimists rearrange already-invented ones. Bankers make money by rearranging the capital structures of already existing companies. Lawyers resolve disputes over old things or help other people structure their affairs. And private equity investors and management consultants don't start new businesses; they squeeze extra efficiency from old ones with incessant procedural optimizations. It's no surprise that these fields all attract disproportionate numbers of high-achieving Ivy League optionality chasers; what could be a more appropriate reward for two decades of resume-building than a seemingly elite, process-oriented career that promises to 'keep options open'?"
