E’una particolare tecnica che consiste nell’avvolgere un pezzo di pesce o di carne con fette di pancetta, lardo o comunque prosciutto grasso. Bardare è d’obbligo specialmente con le carni di vitello che sono molto magre, per evitare che la cottura arrosto le asciughi rendendole stoppose; il grasso, sciogliendosi durante la cottura, insaporisce la carne mantenendola morbida.
