Explanation:
Hi Flaviana,
It really depends on what kind of recipe this is.
A cup is a very precise unit of measurement whereas a bicchiere is a very vague indication. The volume of a glass is not standard, while a cup has a volume of 237 ml. Also, in Italy, nobody uses glasses to measure onions, it would sound really odd.
You can either decide to indicate the volume of the container (e.g. un bicchiere da 237 ml - a bit awkward) or to use an online converter to figure out how many grams of chopped onion you can fit in a cup (226 grammi di cipolla).
Another option is using a generic measure like "a medium onion" (which is by the way what most people agree would fit in a cup once chopped).

You should base your decision on the overall tone of the recipe book and on the audience. If you need help with the decision, just provide details about the context and your audience and I'll try to help.

Have fun!

Meglio specificare

Explanation:
"Cup" in inglese viene utilizzato per vari ingredienti, non solo liquidi, quindi "bicchiere" non è sempre corretto.
Io provo a specificare sempre in base alla ricetta o al contesto in cui traduco.

Ti lascio un paio di link interessanti con le conversioni in base all'ingrediente!
