English term or phrase: bulk cultures
In cheesemaking. Honestly, the resources I found on the internet give conflicting inputs, some even saying that mother cultures and bulk cultures are one and the same:
"For acid type cheeses, lactic acid mother cultures are grown on media and then bulk cultures are propagated and added to milk to make cheese. Acid whey is separated after curd formation. "

"mother cultures" credo che invece siano sieroinnesto e lattoinnesto, comunque "innesti" in generale
