Al plurale, e in documenti ufficiali e legali, "these presents" significa il presente documento, la presente dichiarazione. Vedere per esempio il diz Hoepli.
Quanto a greetings, direi che in italiano stia meglio il singolare. Al plurale sembra avere una connotazione un po' ...come dire...ironica, tipo "e tanti saluti".
