Faktycznie kontekst jest kluczowy, bo operator ma co najmniej 2 znaczenia, które w tym kontekście pasują:
1. The owner or manager of a business or an industrial enterprise.
Zatem, jeżeli owner - to tak jak proponowałaś: RESTAURATOR bo u nas przyjęło się, że to określenie dotyczy konkretnie właściciela, co nie oznacza, że właściciel nie może zarządzać restauracją.
Może natomiast kogoś nająć do tej roboty i wtedy propozycja JacaZwawa jest ok, albo innymi słowy: Manager restauracji.

Czyli restaurator może być jednocześnie managerem, ale słowo manager jest moim zdaniem zbyt wąskie znaczeniowo na restauratora.
