As três traduções parecem adequadas, considerando a formação da palavra em inglês (stone + core).
Minha sugestão é usar uma delas e manter o termo original em inglês entre parênteses, visto que se trata de nomenclatura não consolidada:

núcleo pétreo (corestone) ou
núcleo rochoso (corestone)
