Starches have been used to mimic the pulpy texture of, e.g., an Italian style pasta sauce or ketchup. Pulpy (or gritty) textures are in contrast to textures that may be called creamy or smooth. According to ISO Standard 11036, "Sensory analysis-Methodology-Texture profile", pulpiness is a geometrical attribute and is characterized under the collective term "granularity" as that geometrical texture which is defined in relation to the sensation of size and shape of particles.
