С учетом дополненного контекста, наверное тут twist - не вращение, а покачивание. Т.е. прожарка идет в длинной покачивающейся жаровне, через которую протекает ламинарный поток горячего масла. При несильном покачивании ламинарность потока не нарушается, но он равномернее обтекает все чипсы
