This is from a menu. Is "shoulder" the same as "chuck" (högrev)? Is that correct for both veal and beef?

If you look at the refs. you will see that the right part is called bog in SV although depending on the image you browse you can almost be fooled by having it called högrev. The latter is more like the neck or upper back of the animal. This is at least my humble opinion.
