Kvass is a Russian beverage, the result of fermentation of yeasts and bread.

I seek for a proper English verb to say how kvass is made. Is it brewed? Or simply *made*. My target phrase (for a restaurant menu) is like "Kvass made following the recipe of 1843)

In light of your note (by my comments above (\"brewed\" would help diners to identify the drink\") I meant that people who didn\'t know what Kvass was might think it was a food rather than a drink) I would go for \"brewed\". Why not? Brewed doesn\'t necessarily mean beer; we use \"brew\" loosely anyway and it sounds like it fits the definition.

I would say "made." Below is a link to a very useful web site when it comes to brewing, where the following can be found about kvass:

"Baking whatever grains are available, most often rye, and producing a brew of low-to-medium alcoholic strength, occasionally flavored with fruits or herbs, traditionally make kvass. Most traditional recipes usually call for the use of day old bread and you will find many of these recipes here. The Russians regard Kvass as a unique drink but historically Kvass is mostly a poor mans form of beer."
