Once again, a question form a cookbook. In this recipe, meat is grilled on an iron utencil that looks like a skimmer ( slotted spoon). What would be the best term for that?

Without a picture, I can only guess, but we used to call a FLAT, slotted piece of metal with a handle a slice, and a longer narrower one a "fish-slice". Now I cannot see if your "skimmer" is actually spoon-shaped... A spoon-shaped skimmer with slots we used to call a "slotted spoon".
