English term or phrase: whey sour gel
"[a patent] relates to ice cream products obtained by regulating a whey protein concentrate to 1-4% protein concentration...slowly acidifying the concentrate, forming a whey sour gel and mixing the resultant whey sour gel as a fat substitute with a nonfat ice cream base."

I don't understand this. Why isn't it simply "sour whey gel"? I have to translate this.

disagree  Veronica Prpic Uhing: SiO2 (Silica Gel) that is sand, added to whey proteins to make gel and for consumption?

neutral  Jörgen Slet: it's the acidity that turns whey protein into a gel // VPUHING: silica gel is SiO2, but highly porous and hygroscopic, and definitely not sand. Some pages mention its use for changing viscosity of liquids

-> The asker did not ask this time he had it covered in prior question - stay tuned! Just don't ad sand to ice cream deary!

agree  Jörgen Slet: correct about whey sour gel, but not about "sand", silica gel is SiO2, but highly porous and hygroscopic, and definitely not sand. Some pages mention its use for changing viscosity of liquids, it should form a colloidal solution

-> Thank you very much, I know, silica gel is amorphous not crystalline. Since you mentioned it I found recipe for making chicken soup with 2% silica gel. I think I will keep my silica gel blue
