DNA is bound with special proteins and the sirtuin genes make proteins that can either pull off the other special proteins or put them back on. This is a genetic system in which you can control all genes at once *by opening the DNA as a large patch* and closing it down.

I don't understand the part in ** and I already posted this question on E-G, with no result, though. Can anyone help me? Thanks in advance!

Sirtuin regulate detachment of such proteins from a large portion (patch) of DNA, allowing unwinding of the DNA strand and making it available for translation of large groups of genes contained in that patch. .
