neutral  humbird: Graveyard shift means night shift, which is a shift during which most people are asleep. Evening shift is hours many people are still awake.

If this is relating to factory production, to cover 24 hours, shifts dividing into 3 8 hour sections: 06.00 - 14.00 / 14.00 - 22.00 / 22.00 - 06.00, for example. Evening shift in this case would be the 14.00 - 22.00.

If it is just 'general', as already mentioned, it would be hours contracted to work in the evening (for example, for bar work, you would have lunchtime and evening, in a shop that is open from 06.00 -22.00 you might have a 'shift' from 16.00 to 22.00 etc)
