In this case, a "fondeur" is a person not a machine (I've found lots of "cheese melters" that are machines on the web, but no people). The context doesn't provide any more info than that.

Doesn't sound quite as grand as the French though...

agree  Colin Rowe: Good research! Many ghits for "cheese processor" also refer to machines, but meaning should be clear from the context in this case. "Processor" sounds like a good option.
