yes it's Cantal cheese and "mention" is quoted many times including a sentence about the ageing of the cheese.
Les fromages Cantal ou Fourme de Cantal portent la mention « jeune », « entre-deux » ou « vieux » en fonction de la durée d'affinage et du taux d'extrait sec définis comme suit (...)
- Le changement de mention se fait si et seulement si le produit est maintenu dans les conditions d'affinage (...)

@ Colin: I don't know if this is the cheese in question, but in this case I think the changement de mention is referring to the age of the cheese.
a) Jeune : la durée d'affinage est de 30 jours minimum et 60 jours maximum, l'extrait sec de 57 % minimum ;

b) Entre-deux : la durée d'affinage est de 90 jours minimum et 210 jours maximum, l'extrait sec de 58 % minimum ;

c) Vieux : la durée d'affinage est de 240 jours minimum, l'extrait sec de 60 % minimum.

Ok then it has no special meaning it'a a change in the labelling within an AOC... there can be many changes in the mentions.
mention is there a generic word about what has to/cannot be mentioned on the label.

The product is a cheese, and the conditions stipulated are for where and for how long it must be ripened (within a particular geographical area). The "changement de mention" can only happen if it is kept in the prescribed conditions (which is what is confusing me). Later it is stipulated that if it is moved between one authorised producer or area and another then it is NOT in breach of conditions. I hope this helps.

Anything that could suggest what this "mention" is? Where does it appear? on the product label? Under which circumstances? Any indication as to the exact wording of this "mention"?
