I know it's churning for butter, but is there a special term for ham? I gather it's the step where the ham is swished around in the brine.

Les viandes sont ensuite soumises à barattage (massage prolongé et vigoureux - de 30 à 70 heures - ce qui favorise la répartition uniforme de la saumure dans toute la masse musculaire, et qui facilite, pendant la cuisson, la cohésion entre les différents muscles et les coupes de viande).

Saumure is an aqueous solution containing salt and other flavourings and additives.
