This should be the definition in French in relation to meat production:

"Refroidissement progressif des carcasses dans un local à +2° ventilé jusqu'à obtenir une température de 7° à coeur en 24 h. C'est le ressuage".
I'm looking for the equivalent term in English, thank you.
