As a freebie extra, there are several problems with your proposed "A gasket is a volume existing between two building elements." May I suggest:
"A joint is a space between two construction components."

Don't bother with "existing", it's redundant. On the other hand. I don't really like the idea of a joint being defined as a space, but if that's what your text says, it's not your job to suggest a better definition. Perhaps your client wants to fill that space with some of their patented gungy stuff.

agree  Tony M: Yes, exactly! It's an 'empty volume', AKA space; I think 'the space that exists between' is worth keeping, as it emphasizes the inevitablity of it: i.e. it's not a space that has been left deliberately
