Explanation:
Full disclosure: not one of my specialist areas

Gabarit oftens translates as size or pattern (e.g. for Covid protection masks), but it's a tricky one here.

I think you can boil the situation down to the adaptation above.

Presumably you insert the item of silicone into the ear passageway beforehand, then withdraw it, to facilitate insertion of the implant afterwards, it opens the passageway up presumably.

I considered mock-up too, but it's not really that.
