This is in a list of additional services available to the customer whose wine is being stored along with:

Nettoyage de caisse
Ouverture d'une caisse en bois
Le déshabillage d'étiquette

it also mentions that "La pose de passe ou le déshabillage d’étiquettes supposent une ouverture de caisse au préalable" so its something that is done to the individual bottles in the case, my only thought was fitting a plastic or foam sleeve over the bottle but I have Googled extensively and found nothing.

agree  writeaway: always amazing how much info can be found by using the www to do some research/agree it may not be innate but for translation/translators it is an essential skill.

  -> Thanks writeaway - well to be fair you'd be unlikely to find it if you just searched under "passe" and "étiquette", add in "vin" then you should be getting somewhere. Being able to use Google efficiently is not an innate skill./No comment :)
