  -> "dämpfen" würde tatsächlich besser passen, dämpfen im Unterschied zu dünsten heißt nur im Dampf garen und nicht im Wasser. eine Krabbe schmort man sicher nicht.

Etouffer: Cuire à court mouillement et à couvert.

Schmortopf oder Gusseisen-Bräter ist heute abend eindeutig bestätigt worden. Etouffé wird in der "cocotte" und mit Deckel zubereitet.
