Es wurde hier sicherlich ein Jus verwendet, der durch die Reduktion einer Kochflüssigkeit (in denen Krustentiereschalen, vielleicht auch die Riesengarnelen, aber evtl. auch andere Meeresfrüchte, Fischgräten -köpfe etc. aus/gekocht wurden). Übersetzungsvorschlag wäre: Jus mit Meersaroma.
