The only thing I could find online with 'führender Schnitt' is the title of a chapter of a book on wood carving. I wish I knew what that chapter is about.
At first I thought it was a controlled cut but that term is used to describe cuts made toward the carver but that wouldn't be a good way to ground out the background.
I now think 'führend' is the opposite of pulling the tool towards you. The term 'guided cut' is used in whittling with a knife.

Flacheisen – flat chisel, firmer chisel, carver's chisel
Grounding out the background. Cuts made to remove waste from the background.

slicing cut: the gouge is given a sideways movement as it is pushed forwards.
Always push the tool forwards to cut; never simply lever.
