Die Eintragungen (im Satzbuch) beziehen sich in der Mehrzahl auf Häuser, aber auch Weingärten, Fleischbänke, Gewandkeller, Badestuben, Hofstätten etc., manchmal wurden sogar Burg- und Bergrechte oder Erbschaften verpfändet.

I believe it has something to do with the Weingärten, not "mining rights". Any ideas?

I'm not certain of the translation, but there is certainly some basis for thinking viticulture could be involved, as you say.
