The last two lines of a chorale:

Siehest meiner Feinde Spott,
Du wirst auch mein Unschuld zeigen.

Google gives rather different interpretations when fed the whole sentence vs. word by word, so I would like to ask how the full phrase "Siehest meiner Feinde Spott" should be translated.

I'll do it word for word, and everything taken together, and you can tell me whether that's good enough.

siehest -> du siehest -> du siehst = you see

The grammar may be slightly different (present perfect), as in this example (see Lutherbibel and King James Version; this is Lamentations):

meiner Feinde = my enemies' (possessive)

Spott = mockery (in this context); there are a lot of Bible verses about mockery and some of them do fit here: https://bible.knowing-jesus.com/topics/Mockery

For example: "but they continually mocked the messengers of God, despised His words and scoffed at His prophets, until the wrath of the LORD arose against His people, until there was no remedy"

Aside from the chorale, this is Matthew 26 and following:

I don't like that they're trying to make it fit some pattern (meter, etc.). Did you see the discussion at http://bach-cantatas.com/Texts/Translations.htm

In any case, "behold" isn't right, grammatically. It's "you see" (du sieh[e]st). Also, "doch gar gerne" is not "even though"; much of it doesn't read like the German.

It's not entirely clear to me what your question is. The mockery is described in Mark 16:20-40:
