I wonder if they use artificial saliva because it's a weak solvent, rather than to replicate any situations that might occur in real life.

It doesn't seem to help too much, but I think something like 'safety test', would probably cover all bases.

it might have to do with the safety of the material for children. after all, there is a special "Sabberlack" for toys, which is a type of finishing that does not come off when children coat the toys in saliva...

I don't really understand the reference to Gardinen either, as they're decorative tapestries, not curtains.
I wonder if it's a typo. I can think of three things they might be tested for: colour fastness, shrink resistance, or flammability.

A swab test certainly won't fit here as it would entail using a cotton swab to get a saliva sample.

How about staying vague (as in the source) and just translating it by "saliva test"? Or does the source give any more information about what that test entails?
