relying on
Explanation:
With its 20% of Aligoté (80% Chardonnay), the wine is particularly light and bubbly. Its acidity is intense, giving a grapefruit and lemon juice character. It tastes very dry, relying on ripe fruit for its final softness.

or simply 'using':
In the early 1980s, Alvaro Palacios was sent to Bordeaux to study. When he returned to Spain a few years later, he wanted to make the type of modern wines that were becoming popular there, using ripe fruit, harvested late, and vinifying it slowly in oak barrels. These "fruity forward" Bordeaux are ready to drink young, with fresh, jammy flavors.

He developed the modern international style of red wine using ripe fruit with soft tannins and new wood flavours.

You’ll note that these wines don’t tend to list any grape names on their labels; most are blends, largely relying on local grapes such as Grenache, Syrah, Cinsault, Carignan and Mourvèdre.

designed

Explanation:
But not "for ripe fruit". My suggestion: "designed to emphasise the maturity of the grape with fine concentration".

Explanation:
offering mature fruit
keine Referenzen, ist nur ne Idee, aber mein Weinhändler hier in Sydney würde bestimmt sowas sagen wie "This wine offers you a mature fruit with a fine concentration" oder sowas (womit ich natürlich so gut wie gar nichts anfangen könnte aber es klingt toll";-) Es ist glaube ich nur Werbesprache, relativ sinnentleert meiner Meinung nach.

Explanation:
Supported by ripe fruit. Sounds rather silly like so much winespeak, but it makes sense and there are plenty of citations that I won't bore you with. See also Duden's synonym auspolstern for auslegen.

using

Explanation:
using highly concentrated ripe fruit

I don't think the text is talking about aromas or flavours, it is the ripe fruit from which the wine is made.

centered around

Explanation:
...ripe fruit

Example from link below:

"My show meads are centered around the honey, in the same way that a grape wine is centered around the grape."

Another Example:

"A bright and lively wine centered around raspberry, pomegranate, and licorice flavors."

Note to Kim:
...You might want to draw the line there... By contrast, "centered around" has penetrated the written language to a far higher degree which is a good indicator of its acceptance.. ("Talks centered around the opening of a second front in Western Europe, something Stalin had asked Churchill for in 1942 at their only previous meeting") http://learning.blogs.nytimes.com/2011/11/28/nov-28-1943-all...

neutral  Lancashireman: Contradiction in terms?
1 min
  -> Certainly not

neutral  Kim Metzger: See no. 13. http://www.prdaily.com/Main/Articles/Top_25_grammar_and_lang... /Some people argue that "I could care less" is OK too, since it has become an idiom.
11 hrs
  -> I disagree with that author; lumping this together with those other misuses is ridiculous; too late to fight this with logic; it's a well-established idiom; Merriam-Webster has got that right http://english.stackexchange.com/questions/9254/centered-on-...

neutral  Helen Shiner: Talks centering around an issue is one thing, but grape varieties or flavours; just doesn't make sense. In the context of talks, it refers to the broad spectrum of the terrain discussed. This requires something much more focused./Up to you Michael!

“etwas ist ausgelegt auf”- etwas wurde mit einem bestimmten Gedanken im Hinterkopf entworfen oder geplant , gestaltet, errichtet;
