Für ungehärtet habe ich "non-hydrogéné" auf meiner Margarineschachtel gefunden. (bestätigt von eurodicautom)
"Une margarine est une émulsion composée d'huile hydrogénée dispersée dans de l'eau". fr.wikipedia.org/wiki/Margarine
Für durchgehärtet würde ich sagen complètement hydrogéné.
