Eine Internationale Einheit (Abkürzung: IE) eines Stoffes ist die Stoffmenge dieses Stoffs, die notwendig ist, um als Katalysator (in der Regel: als Enzym) 1µmol des katalysierten Stoffs in 1 Minute umzusetzen.

Die Internationale Einheit ist eigentlich wenig gebräuchlich. Sie folgt auch nicht direkt den SI-Einheiten, nach denen für die Angabe einer „Katalysator-Effektivität“ beispielsweise die Einheit mol/s oder nmol/s angebracht sein könnte. Die Internationale Einheit wurde mit dem Ziel entworfen, biologische Aktivität zu quantifizieren, nicht chemische Menge. Insbesondere früher war es nicht möglich, für eine messbare biologische Wirkung die Masse der Wirkstoffe anzugeben. Um dennoch die biologische Wirkung irgendwie quantifizieren zu können, wurde die Internationale Einheit entwickelt. Mit fortschreitendem Wissen lassen sich jedoch immer mehr Wirkstoffe genau quantifizieren. In diesem Fall werden sie dann nicht mehr in Internationalen Einheiten sondern in Mol oder Gramm angegeben. Die Einheit Internationalen Einheit wird dann für diese Stoffe offiziell als "veraltet" deklariert.

Für jeden Stoff ist das Verhältnis zwischen Internationalen Einheiten und Masse oder Internationalen Einheiten und Stoffmenge anders. Für jeden Stoff sind auch die Neben-Bedingungen der Katalyse-Reaktion (etwa Temperatur, Druck, ...) individuell.

Für viele Stoffe sind diese Verhältnisse willkürlich gewählt. Die World Health Organization definiert sie.

Einige solche Verhältnisse:

1 IE Insulin = 41.67 µg Insulin (hochrein) = 35 µg Insulin (wasserfrei)

1 IE Vitamin A = 0.3 µg Retinol = 0.6 µg Beta-Carotin

1 IE Vitamin B1 = 3 µg Thiaminhydrochlorid

1 IE Vitamin D3 = 0.025 µg Vitamin D3 = 65.0 mmol Vitamin D3

1 IE Vitamin E = 910 µg dl-alpha-tocopherol = 670 µg d-alpha-tocopherol

1 IE Alpha-hCG = 1 µg Alpha-hCG
