skin colour index Explanation: Hi Anthony, If you have "index" in your term, this implies a scale so you don't need to mention "change" explicity ;-) "Veraison" is not possible since, apart from the fact that it is used almost exclusively for grapes in English, it refers to the moment when the berries acquire colour, and not to the process of colour change as a whole. "Ripeness" is too general a concept and in any case is usually measured against other parameters, such as sugar content, but not skin colour. Reference: veraison/véraison OR ripening index Reference information: Hiya there Both terms are used in olive- as well as grape-growing, as already guessed by you and Marco. Have a look at these: www.world-food.net/scientficjournal/2008/issue1/pdf/food/f1... ... cultivar chosen, the environmental growing conditions of the orchard, the olive ripening index, condition of the fruit and their processing methods. www.actahort.org/members/showpdf?booknrarnr=356_75 ... when the olives were harvested at veraison (ripening index 2)... www.actahort.org/members/showpdf?booknrarnr=791_117 ... olive ripening (veraison stage) and/or meteorological conditions (night frost, early winter), so in the four years different olive maturity index resulted. -------------------------------------------------- Note added at 31 days (2009-04-23 08:00:49 GMT) Post-grading -------------------------------------------------- Ciao! Well, Giles is THE authority when it comes to wine-making, so you can't go wrong with him. G'day from sunny (for a change) Piedmont, south of the Langhe... Barbara |
