I am still unsure whether or not to translate it. Bottarga could be translated as roe, but I have seem many instances of it left as is. For mosciame - I have not seen many references to it in the cookery books/manuals/sites I have looked in, and so I may translate it as dried tuna - which was an answer I received from some one else. However, thanks to everyone for their help - as always much appreciated.

Flimsy tuna mixture


Explanation:
Mosciame means a flabby (not firm) mixture but in cooking the expression of "flimsy tuna mixture" gives better the idea. Concisely expressed it would represent "a mixture being deficient in
firmness or texture".
