Vocabolo francese derivante dal latino caput (= capo).
Parola molto nota nel settore della ristorazione (e quindi anche in quello alberghiero) il cui esatto significato è Capocuoco. Esiste anche la locuzione Chef-de-Rang che nel gergo turistico-alberghiero non è altro che un collaboratore del direttore della sala-ristorazione e quindi un cameriere di rango, preposto al servizio da tre a cinque tavoli (secondo la categoria dell’esercizio). Si occupa esclusivamente del suo gruppo; fa passare le richieste e riceve i piatti da parte del cameriere (commis) che sta a sua disposizione.
