I'm looking for suggestions on 'incidere'; maybe there is a term in particular?

I think 'pierce' is fine for perforare, but maybe you can come up with better ideas.

I have never seen "incise" in a recipe - it sounds very medical. Maybe make an incision, but why not just use "cut"?

wash, dry, make an incision - without piercing (like you said), etc..

even though it sounds surgical, this is the normal expression used in cooking. you can google it 'make an incision' lots of responses (with cooking of course attached :))
