Sorry Dave, it was just an educated guess really. I haven't found any references. I saw one example of 'morbido di fave' with a picture which seemed like puréed broad beans. I think paste and purée are essentially the same - I just thought purée sounded better for a menu

That isn't very clear Dave. "il morbido" is an adjective used as a noun in Italian which here translates as paste a noun.

If you are looking for an adjective then "soft almond" but that takes you back to paste, cream or purée. Almonds are hard.

Asker: Hi Jim, I found those references, too, but none of them seems to address "il morbido di mandorla" (morbido as a noun, not an adjective)--they're all about almond paste, which is not what I'm looking for. Sorry, Dave

Asker: Thanks so much, Jim, but I think I have finally tracked this thing down! It's a creation by chef Aurora Mazzucchelli of Ristorante Marconi and I think that she's simply re-naming her Soffice di mandorla (http://www.identitagolose.it/sito/en/ricette.php?id_cat=12&id_art=1470&nv_pg=2), which I am taking the license of calling Almond Puree. I deeply appreciate the work you put into this. Dave
