Italian term or phrase: Mousse di cioccolato con riduzione di caffè arabica
Hello,

'riduzione di caffè arabica':

if I understood correctly, 'riduzione' refers to slowly-cooked espresso, sugar and baslamic vinegar, until you get a pretty thick cream (used in my case as a side of the chocolate mousse).

Any suggestions?

Explanation:
You are right. A 'riduzione' is a sauce that you simmer until it will reduce, that is excess moisture will evaporate. I hope this helps.

agree  Simon Lewis: "reduction" is actually the culinary term, but sounds a bit strange for a dessert, maybe sauce is better here

agree  Judith McLean: Yes, I'd say reduction if it was a recipe, sauce if it's for a menu

agree  Linda Thody: I agree with Judith; "chocolate mousse with Arabica coffee sauce" for a menu

agree  Yvonne Gallagher: for a menu "sauce"

neutral  philgoddard: If the Italian says reduction, you shouldn't dumb it down - most restaurant goers will know what it means. And a reduction sounds more complex and time consuming than a sauce, which could be out of a packet.

Explanation:
I think "reduction" or "reduction sauce" is the right term for "riduzione".
