grilled and/or in "acqua di mare" wine based sauce Explanation: This is a classic Sicilian recipe, the origin of the name is unknown, but I am afraid it is NOT cooked in seawater(!!) It is actually cooked in white wine with small tomatoes, parsley, garlic, chopped onion, olive oil - at most a small amount of water can be added if the wine evaporates too much, and of course salt to taste: http://www.ilgiornaledelcibo.it/ricette/ricetta-scheda.asp?i... http://blog.chatta.it/caloresolare/post/pesce-all-acqua-di-m... |

grilled and/ or all'acquapazza Explanation: http://en.wikipedia.org/wiki/Acqua_pazza_(food) all'acqua di mare è un termine prettamente regionale siciliano, che può trarre in inganno. QUINDI, rather than name it poached fish... I would use the original 'national' term: acquapazza or 'crazy water' |
