Explanation:
I have translated several menus and I always add an explanation to the dish, if necessary, because not everyone has lived in Italy and sometimes menus in English are for international guests, not only for English speaking ones. Usually, restaurateurs appreciate that because they do not have to fumble with their English to explain people what they are going to be eating.

neutral  writeaway: people around the world know what pesto is. it's unnecessary to overload the menu with the recipe as well /if one had to explain in detail all the pasta shapes and names from all over Italy, that would be a book in itself. A fusilli by any other name??

  -> Maybe, but this is not always true for torchietti, I myself had never heard such a name. And speaking from my experience, restaurants appreciate explanations that will save them time and trouble. Do you think it would be better to spend time explaining?
